Especially to the families, loved ones and friends of the innocent lives that were taken and injured #solidarité in the November 13th attacks here. It's impossible to imagine the pain they are in and the grief they will have to overcome to pick up the pieces of shattered lives.

Paris is a small city. There isn't a one of us who wasn't affected directly or indirectly. Whether that means we lost a friend, colleague, relative or loved one, or know someone who did. On France's declared Day of Remembrance, I went out to the site of Le Petit Cambodge and Le Carillon to pay my respects to my fellow Parisians.

The world is also a small place. And we must all ask ourselves, any of us who is a mother, a son, a brother, sister, father or daughter, where will this end? What will it take to live in a world where this kind of violence does not exist?

Courageously, for if the French are anything, they are courageous, as are their allies around the world, the Cop21 talks about climate change and environmental resolutions are still being held here just outside the city. To respect that global initiative, Paris GOOD food + wine is running an interview I did last year with the Cellar Master, Gilles Descotes, of the esteemed champagne house, Bollinger.

In this interview he discusses the certification of Haute Valeur Environnementale which is an agricultural certification that imposes best practices in regards to the environment and, in this case, viticulture.

Episode 11 Paris GOOD food + wine

In this episode of Paris GOODfood+wine for November 2015 we'll be hearing all about ways in which the centuries' strong Franco-American relations are deepening.

The golden nugget of this episode is an interview with members of the 1855 Bordeaux Grands Crus Classés organization telling us about their participation in supporting the reconstructed replica of the Frigate, called L'Hermione, that the Marquis de Lafayette, who we Americans call our French Founding Father, sailed to the United States on in 1780.

L'Hermione is the 3-masted 32 gun frigate that carried Lafayette to New York's harbor in 1780 when he was bringing good news to the American Independence fighters: his King and the sovereign nation of France would support us militarily.

This last summer, July 1 2015, a replica of the frigate arrived in New York's harbor with much fanfare and also with the support of the Castine Historical Society (http://www.castinehistoricalsocietyhermione.org/) the non-profit dedicated to keeping this history alive in our memories today.

The New York Times documented the frigate's arrival last summer by noting in their July 1st edition, " THE last time a boat sailed into New York Harbor bearing the Marquis de Lafayette, ...

The year was 1824, and some 50,000 people — roughly a third of New York's population — lined the streets for a glimpse of Lafayette, the "French founding father," who was visiting the United States as part of a 13-month triumphal tour of the nation he had helped liberate nearly a half-century earlier.

Tasting - Le Grand Auxerrois à Paris

Held at the restaurant that Wine Spec recently named Paris' best, Les Climats (Paris' 7th arr), this tasting showcased gorgeous Burgundian wines that often don't get enough attention...

I'm talking Irancy, Saint-Bris, Chitry, Epineuil, Coulanges-la-Vineuse, Tonnerre, Aligoté and Irancy. 

These are delightful drinking wines and I especially found the Chitry (white) to be the kind of wine to serve when you are welcoming guests for brunch, lunch, an early supper or simply getting together with a few girlfriends to enjoy some wine and cheese and good company. It is light, refreshing and ever so drinkable. 

For the reds, the Coulanges-la-Vineuse (which is also produced as a rosé and as white) is all Pinot Noir, true to its Burgundian roots. But its taste profile offers softer tannins. A good find and one worth discovering. It's also worth keeping in mind that the crémant de Bourgogne is a top-notch product in terms of bubbly and offers a wonderful alternative to its more famous cousin. 

In these photos you will see a few of the hard-working wine producers from these relatvely unsung parts of Burgundy which, are, nonetheless, only an hour and a half from Paris. A good point to keep in mind when planning your next wine escapade.

This being the month of Halloween, a beloved North American holiday, we have a couple of our youngster expats ringing in on what they remember and love the most about celebrating Halloween back home.

Autumn also means cosy evenings by the fireplace. And what's a better companion to that than a glass of fine Port Wine. Mr. Manuel Cabral joins us for this segment to give us hints and suggestions of what pairs nicely with that glass of Tawny or Ruby port wine. He's the Executive Director of the Instituto dos Vinhos do Douro et do Porto of Portugal.

Notes From Champagne Vendanges, Cote des Blancs, 2015

Quelques mots avant de rentrer dans cette période merveilleuse mais délicate des vendanges…

Quand le fruit est cueilli, les dés sont jetés, il vaut donc mieux cueillir au moment où la qualité est maximale. 2015 se caractérise par une année sèche et chaude pendant toute la saison végétative.

Quelques pluies début septembre viennent de redonner un peu de souffle pour la dernière ligne droite. Nos vignes ont peu stressé de cette sécheresse grâce à leur âge, au labour et à notre terroir. En effet, les racines profondes vont chercher l'eau accumulée dans la craie.

La récolte devrait être belle, nous n'avons pas eu d'accident pendant toute la saison si ce n'est un peu d'oïdium, problème plutôt méridional ! Nous débuterons la cueillette des premiers pinots autour du 10 septembre puis viendra le tour des chardonnays vers le 12.

Vieille Vigne de Cramant devient Vieille Vigne du Levant !


Depuis la création de cette cuvée en 1988, nous expliquons la différence entre « Cramant » et « Crémant ». Afin d'éviter cette confusion, nous avons décidé de changer le nom : Vieille Vigne de Cramant devient Vieille Vigne du Levant ! En effet, le lieux-dit de la vieille vigne de Cramant est « Bourron du Levant » et le levant signifie l'Est, les premiers rayons du soleil le matin. À Cramant, le Levant est très différent des vignes situées de l'autre côté du coteau, orientées Ouest. Le côté exposé Est à Cramant donne des raisins particulièrement riches et puissants, c'est vraiment un endroit magique.

Tasting The Unexpected at Bordeaux's Vinexpo 2015

I suppose it's really simply a question of, yes, it's hard work, but somebody's gotta do it...

Of these 8 Decanter Awards- winning wines, the Australian sweet wine made a presence. It was the Morris, Black Label Liqueur Muscat, Rutherglen, Victoria Australia. Established in 1859 and currently owned by Pernod-Ricard. The nose is a candied apricot, caramel and crème brulée. Mouth is ginger, cinnamon, dates. Like drinking caramel. Perfect paired with a Christmas Pudding. It is a Christmas pudding (in a bottle).

One of the exciting new developments just launched during Vinexpo 2015 there in Bordeaux is Jeannie Cho Lee's (MW) new publishing venture called Le Pan. It is more than a glossy beautiful wine magazine, much much more. It is The Art of Fine Wine Living

At their elegant and spacious booth at Vinexpo they held daily tastings. One of the most interesting and best attended was the tasting of Pinot Noirs from Oregon, led by Doug Frost M.W. All excellent and chosen particularly to showcase the difference between 2011's and 2012's and the range among them. Highlighted were the Willammette Valley AVAs.  

TIP: Buy 2011's. The critics missed this one when it was first released and now they are an excellent value, showing excellently.

Evening time was spent taking a guided walk through the just-revealed Château Margaux chais and cuverie. 

The big news at Château Margaux, in addition to this up-do of their first and second year cellars, cooperie and their vinification rooms is that they have installed a new vinothèque.  "Two centuries of Architecture in Tribute to a geat wine from Louis Combes to Lord Norma Foster."

And, of course, this is the year that this most famous Bordelais château celebrates its 200th year.

The wines from Uruguay were a delightfully surprising discovery for me. As was the Syrah from the northern most planted vineyards of Chile that are also just 6km from the coast in an area called Colchagua Valley. You have never tasted a shiraz like this before!

Albert Bichot wine tasting, The Iconic climats from Albert Bichot. What else need be said? Although, you never know when you are going to learn that obscure tidbit of wine knowledge...In this case it came when they explained their Château Gris "Les Terrasses" lieu-dit. It is exceptional in that it is a real chateau, not a domaine as is the case in Burgundy, and that it is a wine from a single terroir, not assembled from different parcels. But here comes the wine competition-winning bit of knowledge: In Nuits-St. Georges, where this chateau is located, there is another property (not theirs) who planted pinot-blanc. The only exception - save for Saint Bris - in Burgundy.

How unusual to offer a vin clair tasting, led by the champagne house's own winemaker. It's enough of a rarity in Champagne, but to offer that at a big (humongous, really) wine expo is, quite frankly, unheard of. 

To taste vins clair (still wines) with the man who is responsible for the blending of these into a wine that will one day sparkle with the effervescence of champagne, is a once-in-a-lifetime. Still wines from Trépail, Villers Marmery, Ay, Verzenay... It certainly makes you ponder just how these magicians come up with their final product?!

It's not every day you get to swirl and then spit out 2000, 2003 and Brut NV Krug champagnes - and all in the presence of the namesake descendant of such a great house as Krug. 

With 2003 being that very hot year all over France, not just in France, most 2003's are not all that interesting. But Krug has their own way of doing things and their impeccable style of champagne comes through here too, notably in its freshness.  Another thing worth noting is that, remember, most houses keep their only their vintages 8 years; at Krug they keep their Brut NV's 8 years minimum.

Despite having a nearly unpronouncable name for their magazine, this is France's foremeost food and wine magazine that has been around for over a couple of generations at least. 

They hit the target at this Vinexpo this year by hosting a Food and Wine atelier, one and even sometimes two every day, where a noted chef would guest while their sommelier did the pairings. 

For Arnaud Lallement that meant a silky kind of a mashed potato topped with divine caviar. Paired with? You got it: champagne. Two kinds were served, the no-dosage Frédéric Sarvat being the one that was the most exciting discovery and also that set off the caviar quite nicely. By the way, the front label of his champagne is not blank, it's just white print on a white label. Very distinctive, really.

There are still a few people who know how to - occasionally - relax and have a good time even during something as rigorous as Vinexpo. 

Not just Cristal was flowing but so was the 2002 Cristal Rosé. And even the 2007 Brut NV, the newest Roederer "baby."

And to go with those Hachis Parmentier Canard, a nice round glass of 1989 Pichon Comtesse. Just stunning. Especially with those expansive vineyard views overlooking the Gironde.
